About this deal

Spread melted chocolate over the bottom of the pastry shell and the coffee cream, and, turning the pastry shell over, set it onto the chocolate covered biscuit, where the chocolate should ‘glue’ them together.

To make the mousseline cream which is absolutely smooth and utterly delicious I recommend using a temperature probe. These new products will offer consumers more choice enabling them to share their favourite products with their family and friends.Instead of baking them in financier moulds, use a mini cupcake tray greased with a little melted butter. Not long ago, craving cool-climate flavours to match the weather, I bought rye bread, creme fraiche, a smoked mackerel and red onions for pickling. When production was moved from the original Beaverhall Road factory in the late 1970's the manufacturing process changed from being hand made to being hollow moulded by machine.

Step 4 Make coffee buttercream: cream butter and icing sugar together then beat in coffee and a splash of milk. Add the gelatine a few pieces at a time to the meringue, whisking continuously between each addition, until all the gelatine has been incorporated and the marshmallow is stiff. Add the eggs one at a time, mixing until each one is fully incorporated, then add the vanilla extract.

Cut the chilled paste into 4cm-ish rounds (I used the rim of a small glass) and arrange on a parchment lined baking sheet. The first part is the custard base, the second adding the flavourings and gelatine when ready to use. The idea for these pastries came from watching a film clip on the original Walnut Whip chocolates being hand-piped and filled. I leave the cakes on the cooling rack then place a piece of greaseproof paper or foil underneath to catch the drips.

Beat together the sugar, vanilla and margarine/butter until light and fluffy then add the eggs one at a time.

Over the years, they were rolled out by Nestle in a range of delicious flavours, including maple and coffee flavours. They are also my favourite walnut to bake with: because they are so fresh they are sweet with a hint of spice. Fold in the flour, baking powder, vanilla, coffee and walnuts, then tip into tin and bake for 45-50 mins, until a skewer inserted in the centre comes out clean. rights and specific trade dress owned by Nestlé; rights elsewhere owned by Associated British Foods.
