To get the best out of Couture, ensure you have thoroughly kneaded the paste before rolling out to work the natural gums and create the elasticity. Sealed packs minimise the possibility of the paste forming a crust, so there's no longer any risk of little hard pieces of sugar being mixed in when kneaded. Please note, the natural oils often rise to the surface of the past, and therefore must be kneaded well to mix these oils and activate the gum for top performance. The main issue I had was getting it to firm up in any way - once applied over cold butter cream it got too sticky to work with so I tried again once the buttercream was up to room temp (I know some sugarpaste isn't as good as Massa Ticino at handling changes in temperature) and had to apply a ton of cornflour just to be able to use a paddle on it.

Granted I may be biased from years of using Massa Ticino but Couture was actually worse than the cheap stuff I occasionally get from Sainsbury's in an emergency.
