What’s more, test-tube studies show that peaches may bind to bile acids — compounds produced by your liver from cholesterol. Peach trees are easy to plant, and this is best done while they are dormant, between November and March. Bare-root trees are only available during this period. Potted trees are available all year round and can potentially be planted at any time, but will settle in best from late autumn to spring. Yeast needs nutrients to thrive, and with some fruit wines (like our blueberry wine), we recommend using yeast nutrient to help along the fermentation. We’ve never needed it with peach wine but if you find your fermentation sluggish, some Yeast Nutrient can reactivate the fermentation and help your wine along.

They can also be kept in an unheated greenhouse, for either all or part of the year when in a container. I personally do not use Campden tablets. Mostly because I just don’t find that I need them in my winemaking process, but also because I enjoy including wild yeasts and bacteria in my creations. There are tons of resources on the internet about using Campden tablets if sterilization is of interest to you. After you slice the peaches, you will want to use lemon juice. You will need two use the juice of one lemon for every four peaches you slice. This translates to about 1/2 tablespoon of fresh lemon juice for every peach you slice. Simply add the peaches to a large mixing bowl, sprinkle in the lemon juice, and toss the peaches with a wooden spoon to coat the lemon juice on the peaches. Drying Peaches in the Oven Dry the fruit until it is fully dry. It will remain pliable but should not be squishy when you pinch it between your fingers. Spring water from the store or filtered water is best—chlorinated tap water can interfere with your yeast! Yeast
