Unlike Champagne, where the secondary fermentation takes place in the bottle, the secondary fermentation of Prosecco usually takes place in large stainless steel tanks making it less expensive to produce. After soft pressing, the grapes are removed from skins and fermented with selected yeasts at a controlled temperature of 16-18°C.
