Palate Oily and subtly spicy at first, before notes of earthy vanilla pod and chocolate-covered raisins develop.

Once it is finally bottled, Scotch whisky has reached the end of its long journey down the years in perfect condition, ready to be dispatched to whisky lovers around the world. It’s got all you want from an every day whisky, chocolate, raisins and smoke, orange and coffee if you add a teaspoon of water.

They say it's a high-quality whisky for special occasions, an excellent malt, and a good all-rounder. It is warm in colour with aromas of fruit, cracked pepper and dark chocolate and flavours of nectarines, ginger and freshly ground coffee. This takes place as the spirit flows through a spirit safe, where the still-man can observe, assess and measure it. The palate follows the nose with a narrower band of apple or bear to go along with a dash of brine before dissipating with a frisson of light smoke and pepper. All the flavour notes are there but it feels like they’ve been added as some sort of concentrate and that the whisky is a fiery, youthful one which has had this and colouring added to fool someone.

Both varieties are produced differently – but both are produced in distilleries located in the most picturesque of settings, close to the natural ingredients on which their unique flavour depends. Part of the new core range of whiskies launched by Isle of Jura in early 2018, this 10 year old expression takes the place of Jura Origin. The “middle cut” is collected by the stillman, only when he is personally satisfied that it has reached a high enough standard. The crucial process involving the distinctive swan-necked copper pot stills, where distillation separates the alcohol from the wash. The highly complex task of creating a marriage of single malt and single grain whiskies to make a blended whisky, is the responsibility of the master blender. Some casks will previously have been used to mature oloroso, fino or amontillado sherries; some will have contained bourbon and some will be oak. A mellow and smooth scotch with no standout flavours (to me at least) a light sweet note from the Sherry cask and a bit of smoke at the very end but nothing too powerful.A blend is a careful and judicious combination of anything from fifteen to fifty single whiskies of varying ages, compiled to a highly secret formula. Once the bottle is open the nose becomes something that would awaken summer in springtime, the notes are just intoxicating, and ones thoughts soon drift to a place of richness and comfort. This is now my 3rd bottle of Jura 10 in as little as 5 weeks, that in it's self should tell you it's good, but if not allow me to explain why I like it so much. They produced a few peated batches, but most of the regular expressions show a trademark oily profile - not unlike cod liver oil though no in terms of flavour of course. The still-man raises the temperature within the wash still and gradually, the fermented liquid is heated and the alcohol in the wash vaporises.
