the one in my photo is the "Professional Series" i think only difference is that it has a nice looking Stainless Steel cover. We used an infrared thermometer to gather an average internal temperature by measuring the temperature of each wall, and the BakerStone had one of the lowest standard deviations of any we tested, with an average difference of only 21°F. I feel like there isn't enough top heat even though i found some reviews of this oven stating 700F measure from the top stone.
