Working on one mochi ball at a time, pop a ball of ice-cream in the centre of the mocha dough circle and fold it around the ice-cream to completely cover it.

Two trips to the microwave and a good beating will produce a thick, rich, glossy, fudge-y sauce you can reheat (in the microwave if you are careful) at a moment’s notice. Open one end to fill the outside chamber with rock salt and ice, and open the other end to fill the inner chamber with your ice cream ingredients. When the ice cream balls are cold enough (if not, let them first firm up in the freezer for some time), roll them in the corn flakes-cinnamon mix, then roll them in the egg white and re-roll them in the corn flakes mix: they should now be properly coated. Firstly, the ice-cream that was stuck to the sides was so hard that I found it difficult to stir and remove from the container.
