Then, when it came time to cook, I was afraid of overcooking the chicken--you use a grill pan (in our case, a large skillet) on high heat and cook the boneless skinless thighs for a full 7 minutes per side before transferring to a hot oven for an additional 10 minutes. I'm always down to try a new recipe/technique for roast chicken, and this one was good but not really that special. It's no secret that I adore Anthony Bourdain, so it should be no surprise that I absolutely loved his newest book. He obviously has a huge amount of very unique experience and has put so much work into his talent and career. Like many other celebrity-authored cookbooks of late, Bourdain tackles the subject of home entertaining head-on.

We made this dressing for a tossed green salad for a barbecue, but used whatever fresh veggies we had on hand (radish, beets, cucumber). I picked up this cookbook from the library right before Thanksgiving, which was well timed, because it includes a Thanksgiving Tactical Primer with a 3 day preparation plan and some delicious, quite traditional recipes for the feast. I simply prefer a mac n cheese with more of a runny sauce, and because of the huge proportion of cheeses in this one, it was quite thick after baking. Reading Bourdain's commentaries, you get the sense that “Appetites” reflects the man and his experiences. We tear, rend, chop, eviscerate, mangle, and slice living, thinking, loving creatures, even the unborn, for our dark pleasures.

No red onion, so I used a shallot, and our market doesn’t have navel oranges so I used Valencia, which fell apart when sliced due to so many seeds. I used a bit of the clam's canning liquid since I had no clam liquor, and about 1/2c of pasta water (which I had salted aggressively prior to cooking the pasta). I found these crude displays off-putting enough that I couldn't make it through more than half the book.

Aside from his snarky little stories and potty mouth tidbits, (which kind of get old after a while), there wasn't much else of interest. Some years ago, I was watching "Turner Classic Movies", and the host, Robert Osborne, had celebrity guests on to recommend their favorite movies of all time. While they do lean practical, it's still a time investment I'm not able to make very often and some of the ingredients, particularly in the seafood section, are not easily acquired. Bourdain is not messing around when it comes to the quantity of garlic (12 cloves was 1 full head for me), but the result is undeniably delicious. It's kind of a rock n'roll cookbook; not great for vegans and there's not a ton of quick prep stuff in here.I'm not sure the butter under the skin really added much, and the photos of the chicken prepped before going into the oven show twice as many butter pats put under the breast, so I did that and ended up distributing the full 4T….

With all the peppers coming from the garden, this was a great choice and I plan to make it again soon - this time destined for the freezer.

When you live your life in the world, devouring all that you see, you're marinating in what you consume. If you have already submitted another request to index a book or magazine yourself, please do not make any additional requests until you have indexed and submitted that book or magazine. Not so much seeing the author, drooling white sauce like a perverted Guy Fieri, next to his recipe for buttermilk biscuits and gravy sauce. Appetites has so much potential that's been lost due to the minimal profanity, and a photo of the author eating a sandwich while sitting on a toilet.
