Temperature control – by controlling the air allowed into the pot, it is possible to control the temperature to within three degrees. You can extinguish flare ups by closing the damper top and draft door. It’s hard to clean! You cannot clean it like the rest of the grill, using a ‘high heat burn’ as it will melt. And if you use any hard, abrasive cleaning brush or pad, you will take off the paint. I recommend using a drip tray to help with this.

Very little clean up – all grease and spattering are absorbed by the Kamado and eventually burn off. Also, the smoky flavor I got on these beef ribs with a chunk each of cherry and oak was fantastic. However, when it comes to the smoke profile, I’m not sure there is much of a difference in taste compared to my previous cooks. My friends and family feel the same. Kamado grills are versatile, designed for multiple cooking methods. Accessories like the ceramic heat deflector turn a direct grill into an indirect cooker. Firebox dividers can create two cooking zones. With the right accessories and setup, a kamado grill can bake, roast, smoke, sear, saute, grill, and much more. First, you should definitely plan to use lump charcoal to fuel your kamado grill. Kamado Joe sells their own brand of lump charcoal but you can use any kind you want! Lump charcoal is a type of organic, all natural fuel that burns extremely clean and has zero additives in it like many charcoal briquettes do. Most importantly, lump charcoal produces minimal ash when it’s burned, which is key for all kamado grills – by design their ventilation systems will get clogged up with too much ash. Moisture retention​ - the shape of the Kamado Joe creates convection currents inside that create air circulation that helps retain moisture. When I open the dome lid on my Kamado Joe bbq my glasses often fog over from the moisture. That doesn't happen on any of my other grills. The moist environment helps provide more efficient cooking without the need for a water pan.

So on that note, here are, in our humble opinion, the Big Joe III’s best features, and how we found them while grilling and smoking. Large Cooking Area Weighing up the pros and cons, I would say if you have a version 1 or 2 Kamado Joe grill, it’s not worth buying and adding a SloRoller to your grill.
