This small size also has its own advantages. Obviously maintenance is one, but also it makes it extremely fast to cook on as the heat is more concentrated.

I used my Harbor Freight rotary cutting tool to cut the mesh. This is probably the most dangerous part of the entire project - be sure to wear eye protection and gloves. I always recommend hearing protection with the rotary tool as well. When you get done with the cuts, you can round off the sharp edges with the rotary tool. It won't offer the same smoky flavour or reach the same high temperatures as a charcoal BBQ, so may not brown and sear your food in the same way. However, the lower temperatures of a gas BBQ are an advantage if you want to cook joints of meat for a longer period using rotisserie accessories.

Key to good charcoal grill is air dampers or vents. Most charcoal grill chambers have two, with one (the intake damper) located towards the bottom of the chamber, and the other (the exhaust damper) located near the top. The big test comes when you put the starter chimney full of coals in the middle of the tray. That's the maximum weight your tray will normally see - and in this case I had no bowing in either direction. I ran a complete set of coals through an entire heating cycle to burn off any oils or whatever before using it. Safety– Ensure that the charcoal is completely extinguished or burnt out before moving it. Always use heat protection, such as heat-resistant gloves and tools, when handling anything hot.
