About this deal

The philosophy, vision and spirit of Dom Pérignon are incarnated in his Manifesto, a document which explains the ten basic principles guiding winemaking at the house. Dom Pérignon can only be a vintage and each year the Chef de Cave reinvents the house style with different grapes, creating a unique champagne: a perfect balance between the expression of Dom Pérignon and the expression of the vintage itself. It is made using a subtle blend of two grape varieties – Chardonnay and Pinot Noir – which are taken from the very best vineyards in Champagne. Thanks to the incredibly intricate growing process that’s affected by sunshine, rain, heat and humidity. Winemakers blend Chardonnay and Pinot Noir to make Dom Pérignon, using the traditional méthode champenoise where the wine is fermented for a second time in the bottle. As it ages, the yeast consumes the sugar, giving the Champagne its ubiquitous bubbles. He shaped things up in a move that many could now class as doing the Lord’s work by mixing grapes with new vigor and passion for producing a bottle full of graceful and fragrant sparkling wine.

of vineyards in Champagne are planted with Chardonnay and it performs best on the Côtes des Blancs and on the chalk slopes south of Epernay. It is relatively simple to grow, although it buds early and thus is susceptible to spring frosts. It produces lighter, fresher wines than those from Burgundy and gives finesse, fruit and elegance to the final blend. It is the sole grape in Blancs de Blancs, which are some of the richest long-lived Champagnes produced. The "environmentally friendly" designation refers to estates practising environmentally friendly wine-growing techniques, but that have not opted for certification or who are still in the process of converting to organic agriculture or biodynamics. These estates may have adopted biodynamic principles (non-certified) or simply no longer use chemical products. A rigorous selection process in both the vineyard and winery ensures that only the best grapes go into Dom Pérignon champagne. Chardonnay and Pinot Noir are used in roughly equal proportions without one variety dominating the other.

There are three plenitudes in the life of a given vintage: the first plenitude spans between seven to eight years after the vintage, which is when Dom Pérignon Vintage is released, while the second one arrives between 12 and 15 years – which was previously the first oenothèque release, but from now will be branded as P2.Thethird windowcomesafter around 30 years, when the Champagne has spent more than 20 years on its lees, which will now be termed as P3. It is the result of extra time of maturation and constantly monitored and tasted by the Chef de cave to determine the perfect time for disgorgement. [13]
