MIX OLD AND NEW: For a spin on traditional recipes you could add a regal twist to a jam roly poly or add modern elements to an old family cake recipe. She reveals: “When I discovered the Queen had lemon posset at her wedding I decided the recipe had to be based around lemon flavour. I came up with my Lemon Swiss Roll and Amaretti Trifle pudding. Beat with an electric hand mixer until the batter is smooth, using a spatula to scrape the bottom and sides of the bowl as needed.
