Well, when I was working on my Lamb Rogan Josh recipe, I decided I would have a bash at making my own pilau rice and do you know what I discovered? It’s really easy peasy to make at home,even more delicious than the shop bought stuff…and, even better, my kids love Mummy’s homemade pilau rice too (phew!). Cook the rice on a medium heat (stirring gently occasionally so the rice grains do not break), this should take 5-7 minutes Add ginger and garlic paste, cook for 2 minutes before adding mixed vegetables and red chilli powder to pan Alternatively you can do what I do when making this rice for a dinner party – I prep the rice up to the point of actually tipping the rice into the pan (i.e. the onions, spices etc.) before my guests arrive. Then 15-20 mins before the rice is needed, all I have to do is tip in the rice and water, bring to a boil, turn down, cover and leave it for 8 minutes, then just turn it off until it’s needed. Once the water has almost been soaked up by the rice, completely lower the heat and cover the pilau with two small sheets on foil (inside of the pan) to completely cover the rice and also the top of the pan. Put a lid on the saucepan and steam cook on a low heat for 2 minutes

Cook the veg for 1 minute or so before adding water, salt and garam masala to the pan and bring to the boil (test the water for seasoning, it should be a little over seasoned as the rice will require this for flavouring)
