In the space of a few years, the drinks market has become awash with products that claim to boost gut health. With the increasing trend for low or no alcohol drinks for social occasions a raft of alternatives to challenge sugar-laden sodas are developing. We are studying this with the WEFO funded Future Foods Programme at Aberystwyth University, looking at ‘Functional Foods’, using high resolution metabolomics and quantification methods. Returning home, they later realised their grandparents brewed this drink in the former Czechslovakia more than 40 years ago.
